We spent one lovely weekend at this gorgeous property, in October 2023, and were given the best signature bespoke hospitality and top VIP treatment in all the various touch-points by the entire amazing team of Capitol Kempinski, and were just amazed on the full diverse selection of food and drink at the Executive Lounge, during Cocktail hours in the evening, breakfast selection and the Champagne brunch on Sunday! Truly a hallmark of distinction and true finesse! Extraordinaire! The fact that entrance lobby parking was specially arranged for me along with another wedding car showed the exemplary service reserved for special patrons of this hotel!
Accommodation
The Capitol Kempinski Hotel Singapore is a restoration masterpiece, featuring a design that stays true to the buildings’ colonial art deco and Venetian aesthetics, even as they have been updated for contemporary style and elegance. Precise lines and geometric shapes in the interiors bring visual continuity to the design aesthetic. Travertine limestone columns, piano rosewood lacquer finishes and Italian marble floors are a nod to the richness and opulence of Venetian design, and are beautifully juxtaposed against muted
warm tones, from the embossed wallpaper to the original Chengal wood flooring. The result: understated grandeur with a distinct warmth, exuding with a homely feeling!
High corniced ceilings, dramatic archways and grand windows offer sweeping views of the city and an abundance of natural light that shifts with the day. Singapore’s mascot, the Merlion, inspired the patterns on the lamps and cornices in each room, a subtle tribute to the Kempinski’s new home. We chose a Grand Deluxe Room, 50 sq meters size, comfy and nice, that came adorned with plush towels, lovely-styled carrier bags, welcome fruits and chocolate, greeting card, unlimited mini-bar, tea and coffee refreshments as well as a range of Salvatore Ferragamo toiletries, ooooh, my favourite line!
Guests are warmly welcomed to The Capitol Kempinski Hotel Singapore by the brand's signature brand ambassador, the Lady in Red, who embodies remarkable dedication to impeccable personal service and superb hospitality - the epitome of timeless European elegance. Each of the 155 guestrooms and suites, spanning from 42 sqm, boasts stunning architectural details and light-filled lofty interiors. With almost 50 unique room configurations, each space is thoughtfully designed, and in ways that celebrate its conservation elements. All nine room categories are spacious and include a luxurious bathroom with a free-standing, deep-soaking bath, and a generous amount of work space. Spa, Gym and Saltwater Pool
For wellness and relaxation, The Spa of The Capitol Kempinski Hotel Singapore promises to be a blissful retreat, with its fusion of modern therapies and traditional Asian massages. Henceforth, we embarked on a pampering and rejuvenating session with a luxurious facial treatment by Valmont - so rejuvenated. The 24-hour gym, gym, appointed with state-of-the-art Technogym equipment, is ideal for fitness enthusiasts looking to keep up with their workout regimes, so we had a go at it, and also had a dip at the outdoor saltwater relaxation pool which is definitely the perfect place to kick back for an afternoon. So refreshing!
Lobby Lounge Tastefully partitioned from the main lobby, this is the place to be for an unhurried afternoon, and so we chose to spend some time here. Enjoy light bites, Asian favourites, alongside a discerning selection of wines and cocktails - all amidst a tranquil and elegant setting. Or, relish the exquisite Afternoon Tea showcasing delicate sweet and savoury items for a relaxing afternoon, or sample a delicious Proseco to go along with the yummy bites, which we did, to full delight in this comfortable setting with plush seats, a good place for chatting and good fun!
We sampled the breakfast one late morning (breakfast is between 6:00am to 10:30am) and loved the Asian assortment of tim sum, prawn noodle soup, chinese porridge, cheeses, ham assortment, and an entire array of Breakfast egg delights, trying out both the egg benedict of salmon and fresh ham, and the home-made Hollandais sauce was simply wonderful, made especially by the chef. There was even an egg tart display that was specially served by the pastry chef, and a whole array of kiddy breakfast items for the little ones, so thoughtful!

15 Stamford by Alvin Leung at The Capitol Kempinski Hotel Singapore announces the launch of their brand new Tropical Sunday Champagne Brunch. Held every Sunday, the brunch experience presents a buzzing atmosphere with live entertainment, thematic cocktails, and a wide variety of live stations serving modern Asian classics and mouth-watering grilled meats and seafood. We sampled this amazing buffet spread consisting of the cold seafood section. The freshest Snow Crab Leg, Tiger Prawn, Blue Mussels, and Seasonal Oysters is paired with unique condiment choices such as Thai assam vinaigrette, yuzu ponzu, cilantro and lime emulsion (so amazing).
Our Sashimi platter comprised of a selection of the highest quality grade Tuna Akami, Hiramasa Kingfish, and Norwegian Salmon. A variety of the finest artisanal cuts grace the Charcuterie and Cured Fish Station. These include Beef Bresaola, Wagyu Pancia, Mortadella Bologna Pistachio and Jamón Ibérico De Bellota. We sampled and savoured both Hot Smoked Salmon and Smoked Haddock, both served with side options such as horseradis cream, Lilliput capers, marinated olives, and anchovies. Just brilliant!
Save room for dishes from the Pasta & Noodles section. Make your own pasta with a choice of capellini, fettuccine or macaroni, to be cooked a la minute in sauces such as the luscious aged cheddar cheese sauce, Asian aglio olio with a mild spicy kick, classic basil pesto, decadent black truffle cream, and the fusion yellow curry cream, this was such a fantastic idea to allow for a DIY pasta selection based on your own personal fave concoction - chef for a day!
15 Stamford's Signature Laksa, was also served in the noodles section for a bowl of rich, slurping goodness, and I am elated that I went for it! Just delicious! Jazzing up the usual repertoire of buffet classics, 15 Stamford by Alvin Leung presents a luxurious foie gras station serving Pan Seared Foie Gras topped with Banana Rum Marmalade. 15 Stamford by Alvin Leung is known for its hot coal grill, so the Tropical Sunday brunch would not be
complete without Grill Carving and Rotisserie Spit Roast sections. We tried a plethora of succulent meats and seafood, chargrilled to perfection.
Pile your plates high with Wagyu Beef Chuck, Angus Beef Ribeye and Wagyu Beef Hanger Steak, freshly carved from the grill, alongside spit-roasted Wild Snapper, Roasted Duck, and Pasture Fed Lamb Leg. Amplify the flavours of the fork-tender meat with an array of sauces: adobo butter sauce, wood-smoked barbeque sauce, Asian chimichurri, Sarawak blackpepper sauce, mentaiko hollandaise and cilantro olive., there were 9 to choose from ..
Meanwhile, the seafood grill will include White Clams, Spring Bay Mussels, and Tiger Prawns, and we rounded off the brunch on a sweet note with a selection of desserts. Guests can choose between three ice cream flavours: Chocolate Fudge, Thai Coconut, and Calamansi. There is also a Chocolate Fondue with roasted almonds, Valrhona chocolate balls, and seasonal fruits for dipping.
We also relished and went for the some of the meticulously crafted treats such as Yuzu Meringue, Matcha Financier, Lemon Purple Velvet Mousse Cake, Pandan Fudge Cake, Raspberry Profiteroles, Assorted Macarons, and Peranakan Kue In addition, 15 Stamford by Alvin Leung also featured a rotating selection of five premium seasonal cheeses
every week, from Fourme d'Ambert to Roquefort, Grana Padano, Reblochon and Goat Cheese, which was presented alongside accompaniments such as crackers, lavash, quince paste, grapes, muscatel and honeycomb.
Our Tropical Sunday Brunch was only complete when it became a sparkling affair with a whole series of free-flow champagne courtesy of Telmont. The official champagne partner of 15 Stamford by Alvin Leung, Telmont is a champagne house that has always showcased its singularity. Over a century, through four generations of visionary winegrowers, Telmont has produced a structured yet remarkably ethereal wine and has enabled its terroir to express itself to perfection through its champagne, offering organic, environmentally friendly champagnes that are balanced between tension and freshness to create a perfect equilibrium.
Some of Telmont’s champagne that will be served at the brunch include the Réserve Brut, which has hints of honeysuckle and vanilla on the nose with an elegant foam. Powerful yet remarkably subtle, with an extraordinarily lingering finish, their Réserve Rosé reveals notes of fresh red fruits with a touch of brioche.
Last but not least is the Billecart Blanc De Blancs, a sophisticated expression of dry, baked yellow fruits with toffee notes, which we also tasted with full happiness! Tipplers at the bar section can also look forward to a selection of tiki-themed cocktails. Fog Cutter is a vintage tiki cocktail incorporating Bacardi Anejo Cuatro 4 Years Old Rum 4-Year Old Rum, Bombay Sapphire Gin, orange juice, sherry, lemon and almonds for a fruity drink with a punch. Another tiki classic, the Mai Tai combines Bacardi Oakheart Spiced Rum with lime juice, triple sec, almonds, and Bacardi eight-Year Ocho to create a tart and strong cocktail with hints of citrus. Lastly, Jungle Bird features Bacardi Anejo Cuatro, pineapple juice, lime juice, and Campari for a refreshing drink.

A Heritage & Art Immersion
The hotel's Heritage Curator, Jean takes guests on an immersive tour, bringing to life the glorious past of Stamford House and the Capitol Building. Through personalised storytelling, guests can learn about the transformation of these two heritage buildings and the Civic and Cultural District, alongside an introduction to notable art pieces displayed in the Hotel. The 45-minute tour is available every Wednesday at 17:30 and Saturday at 15:45. Available for all in-house guests. To join the tour, you can simply register with the Front Desk.
Sunday's Heritage Breakfast Corner
Learn about Singapore's heritage, culture and food in an interactive session with Jean, the hotel's Heritage Curator during breakfast at 15 Stamford. Guests can also choose to embark on a more in-depth session with a personalised tour after breakfast at 10:30AM, where Jean brings an immersive experience highlighting the history of the hotel buildings. Available every Sunday, from 8AM to 10:30AM. At the Champagne brunch on Sunday, they also introduce heritage home cooked dishes to celebrate the diversity and culture of Singapore's food heritage which is synonymous with this heritage exploration and tour.
The Bar — at 15 STAMFORD The 80-seater storied bar offers a wide range of cocktail classics, including its signature Plantation 1840 rum cocktail, as well as a carefully curated range rum labels - one of Singapore's largest collections amidst an intimate setting exuding a classic, heritage charm that will seduce sophisticated connoisseurs and cosmopolitans alike.
