UltraLuxe 2024 - DineLuxe : Entrepôt @ The Robertson House

UltraLuxe 2024 proudly presents a new pillar of niche luxury propelled by human ingenuity and passion: DineLuxe. 


From 4 to 13 October 2024, DineLuxe collaborates with Singapore’s culinary talents to present gastronomical creations in their respective highly inspired dining spaces. “Culinary is a form of design and craft, which they hope to elevate its appreciation through DineLuxe during the UltraLuxe festival of niche luxury, which celebrates art and forms of different genres. They aim to curate both exalted and unsung heroes of Singapore’s culinary universe and showcase their creativity and passion to local diners and overseas visitors.


DineLuxe’s gastronomical focus for this year is “Purism” – the sheer authenticity of local talent’s artistic endeavours crafted into a set menu of accessible price range starting from S$88.” Angela Loh, Founder and CEO of UltraLuxe DineLuxe is committed to showcasing the artistry and skills of emerging and renowned chefs and elite restaurants, zooming in on each Chef’s creative essence in unfolding "Purism in Culinary" – a curated menu that embodies their unique style and expertise, blending luxury in culinary traditions, and for this purpose, five restaurants have been assembled to take part in DineLuxe 2024, including CAPASSO, ENTREPÔT, IMBUE, OSO & SARAI.



Nixon Low

Nixon is a seasoned chef with over 16 years of culinary experience under his belt. Growing up within in the F&B industry, Nixon’s passion for food has always been deeply rooted in his upbringing and wealth of experience that spans across the globe, making him a true ambassador of gastronomy.


Trained in European cooking techniques, Nixon felt a need to revisit his Asian roots and looked to expressing it through his food. With the traditional communal style of Asian dining, Nixon aimed to create tasty yet unpretentious dishes that offer flavours that are familiar yet invigorating. A perfect example is his contemporary twist on a classic Singaporean dish like the Roti John which has been a local favourite for years. He modernised the dish by alternating the different fillings within to cater to the evolving tastes of the modern palate. This gave birth to a great lunch option that offers comforting flavours that we are all familiar together with intriguing textures.


THE DINELUXE MENU BY ENTREPÔT

The menu is inspired by the desire to Inspire, Indulge, and Invest, presented in a reverse order in a Supper Club format.


By Invest, they take premium and unique ingredients and transform these components into different variations in their aptly-named supper club starters.


• Homemade Milk Bread is paired with uncommon crab roe butter- the taste is eloquent and has the right texture and flavouring and with the encased super Mini dried prawn, provided a touch of umami to the composition of this vietnamese butter preparation.


• Entrepôt signature Terracotta Tea is elevated for Dineluxe by incorporating Iron Buddha Tea and a shrimp medallion shaped in the form of a jade - distinctively, an exquisite bite that is simply funnelled to perfect elevation, with a distinct strong tea flavour that doesn't overpower the tastebuds.


• Black Gold Charcoal Grilled Chilean Seabass: Black gold in the form of a black soybean tofu is fried crispy and paired with rice lees velouté and caviar vinaigrette - the tastiness is expanded to a succulent medium with a soft texture interspersed with a nice crispy fried texture; the presentation is a reward and feast for the eyes, and the use of the right ingredients is applauded.



By Indulge, they believe that "If you can’t resist it, then best embrace it"

• 54 Degree Cherry Valley Duck: Roast duck and cherries are the ultimate indulgence, paired with crispy clay potatoes, finished with a lush madeira and dragon fruit jus - an instant explostion but pleasant impact from the Amarena cherries, not gamey, well structured Duck, a neat crunch to the Clay potatoes and we simply adore the celtuce; it was a sincere combination; love the Amarena bursting on to the well sous-vide duck at 54.4° - excellent control of culinary temperature. Marvelous!



By Inspire, nothing beats "rounding the meal with a vice, or not? Is it smoke and mirrors or the perfect evening to pass on the experience?" as their philosophy; we were whiskered away for our next session of a cocktail and dessert pairing - a vibe of heritage that is inspired “opium memoirs”  - images of yesteryears start to fill the ambience contained within this secret venue termed • Opium at Chandu: Entremet, Lapsa were the format used and this venue was tucked nicely just around the corner from Entrepôt..  a cosy cocktail bar with a design drawing inspiration from opium dens and clan associations.


All the dishes were copacetic and juxtaposed well - the chef and culinary operations chief Nixon did a great job of sharing his inspirations and creations.
